Healthy Black Bean Brownie Mini Bites

I know what you might be thinking oh, when you think of brownies you don’t ever think an ingredient being black beans in them. I didn’t either and actually even more neither did my husband but these have been my go-to whenever I’m craving brownies but don’t want the added sugar or calories.  When I can get my husband to say that they ACTUALLY taste good, I KNOW they are good!  (he likes healthy but, cringes at combinations of chocolate and beans lol)

I have made these in the past but when I first started making them oh, I never added any flour of any kind. I won’t say that they didn’t come out tasting okay but their texture was never cake like or even fudge like. With these however, I use oats as the flour and they come out exactly as a Brownie Bite should be!  Cake like, gewey, chewy and delicious!  In terms of sweetness I use liquid stevia and I also sprinkle in the Chocolate Donut seasoning from Flavorgod but, the seasoning is completely optional (if you haven’t tried it, I seriously recommend!).  In this recipe, between the stevia and the chocolate chips that you’ll be adding in, it offers JUST enough sweetness. You can also top with anything from chopped nuts to sweetened coconut which is my personal preference.

If you are skeptical about these, trust me I understand but I guarantee that these will be your go-to whenever you want chocolate without all of the guilt.  Trust me!  You can probably even fool your kids (and your hubby) that these are not healthy!

Black Bean Brownie Bites

These delicious and decadent brownies will satisfy your chocolate cravings without the guilt!

Equipment

  • mini cupcake pans
  • food processor

Ingredients
  

  • 1 15 oz Can Black Beans Drained and rinsed
  • 3/4 C Quick Oats
  • 3/4 C Almond Milk
  • 1/4 C Melted Coconut Oil
  • 3 Tbsp Dark Cocoa Powder I use Hershey's
  • 2 tsp Vanilla extract
  • 1/4 tsp salt
  • 1/2 tsp Baking Powder
  • 1/4 tsp Liquid Stevia
  • 1/2 tsp Chocolate Donut Seasoning from Flavorgod Optional
  • 1/3-1/2 C Dark Chocolate Chips
  • Toppings: Sweetened Coconut, Chopped Nuts, Extra Chocolate Chips Optional

Instructions
 

  • Preheat oven to 350°F
  • Combine all of the ingredients (except the chocolate chips and toppings) into a food processor. Blend well. With a wooden spoon, fold in the chocolate chips
  • Grease the mini cupcake pans lightly. Using a small cookie scoop, scoop the batter into each cup. (if you don't have a cookie scoop, use a teaspoon and measure out 2 teaspoons of batter into each cup) Top with any of the toppings of your choice.
  • Place pans in oven and bake for 17 to 18 minutes or until the batter is slightly firm.

Notes

These can be stored in the refrigerator, in an airtight container for up to 5 days.
