Baked Sweet Plantains with Ground Beef

WOW!  It has been a crazy busy time at Feathered Sunsets Homestead!!

Between being sick at the start of August (which took me out of the loop for almost 10 days) then lack of energy, garden tasks, chicken keeping drama…… oh and then getting sick AGAIN (not as horrible but, I think it was just a continuation of sinus issues), the list goes on!  It was a ridiculous end to an already busy summer.  Let’s just say that I am soooo ready for Autumn and slower days.

OK, back to the recipe!!

If you have heard of Pastelon (which I don’t think has an English translation.  It’s basically like a lasagna but instead of noodles, you use sweet plantains and the meat will be in a creole sauce.  Some people add cheese but, I am not a fan of adding cheese to mine.  This recipe is basically a deconstructed version of a pastelon and so very easy to make!

The recipe uses sofrito and sazon which, if you aren’t familiar with them, I have a few posts that have more info on these ingredients HERE .

Puerto Rican Baked Sweet Plantains with Beef

Ingredients
  

  • 4-8 Ripened Plantains These will be yellow in color and not green
  • 3 lbs Ground Beef
  • 1 Bell Pepper Any color
  • 1/2 Cup diced onions
  • 2 Cloves diced garlic
  • 12 oz bag of broccoli slaw
  • 2 Tbsp Sofrito
  • 1 Packet Sazon (if you have the one in the jar, then 1 1/2 tsp of sazon)
  • 1/2 Cup Tomato Sauce
  • 1/4 Cup Water Give or take. You want a sauce consistency so eyeball the water. Add more after simmering for a bit if needed
  • 1/2 tsp each garlic and onion powder
  • 1/4 tsp each salt and pepper
  • 1/4 tsp dried oregano
  • Spray Olive Oil

Instructions
 

  • Preheat your oven to 385°
  • Peel your plantains by cutting the tips off, make a slit down the middle of the skin (not too deep) and peel the skin off. Slice each plantain in half, down the middle.
  • Lightly spray a baking sheet with olive oil and place the plantians in. Lightly spray plantains with oil and place in preheated oven. Bake until soft and tender (about 20 minutes)
  • In the meantime, brown the ground beef over medium heat. Add sofrito, onions, peppers and garlic and sauté for 2 minutes or until peppers and onion and slightly tender. Next add the broccoli slaw, sazon, tomato sauce and water. Add salt, pepper, oregano, garlic and onion powder. Lower heat, cover and simmer for 20 min. (if needed you can add a bit more water to make the sauce to your liking)
  • Serve beef over the baked plantains. Enjoy!!
