Easy Sesame Teriyaki Meatballs

This recipe is SO easy that it can make itself!  I had a moment of not knowing exactly what to make one day for meal prep as I was trying to keep it low key and use what we had on hand.  We had frozen turkey meatballs, rice, pasta, veggies and of course my spice rack and condiments from the fridge… OK, what can I put together that ISN’T just spaghetti and meatballs??  

I actually looked at the veggies for inspiration since I wanted to incorporate one of them.  And then a light went off in my head, beef and broccoli!  Ummm, we don’t have beef…hmmm, ok, wait, I have all that I need to make a Teriyaki sauce and we have the rice and the broccoli.  Yes!  So easy and it was a huge hit!

This will make about one cup of the teriyaki sauce.  Serve with a side of steamed white rice and steamed broccoli. 

Ingredients

  • 1 package of frozen Turkey Meatballs (20 oz)
  • 1/2 Cup Water
  • 1/3 Cup Soy Sauce or Ponzu Sauce
  • 4 Tbsp Brown Sugar
  • 2 Cloves of Garlic (minced)
  • 1 tsp Fresh Ginger (grated) or 1/4 tsp of ground
  • 1/4 tsp sesame oil
  • 1 Tbsp Cornstarch
  • 1 Tbsp Toasted Sesame Seeds 

 

Directions

 

  1. Combine Soy Sauce, sugar, garlic, ginger and sesame oil in a saucepan, whisk and heat over medium to low heat until the sugar is dissolved.  
  2. In another bowl, combine the water and the cornstarch, whisk well (this is called a slurry).  Add this to the warmed ingredients in the saucepan.  Whisk well until sauce starts to thicken (about 2 to 3 minutes)  
  3.  Meanwhile in another pot, add in your meatballs and heat through (according to package directions).  Pour the thickened Teriyaki sauce over the meatballs and let simmer for about 2 minutes until meatballs are heated through and sauce covers each meatball. 
  4. Serve over steamed rice and broccoli, sprinkle with toasted sesame seeds/  

 

 

Tips & Tricks: If you see that the sauce is TOO thick, feel free to add a bit more of the water.  You can definitely make this with homemade meatballs if you choose to.  The frozen ones are more for convenience and will save some time.
