One of my favorite side dishes is always wild rice.  I used to always buy boxed brands because well one, it was the fastest rice you could ever make but two, we love the flavor!  The downside of boxed brands is the sodium levels so, I decided to create my own version without the excess salt.  I usually serve this on the side of a chicken dish or even with steaks.  However you serve it, you and your family will be sure to enjoy this flavorful and healthier version!

**You can make this in a rice maker or on the stovetop

Serves 6 to 8

Ingredients:

  • 2 Cups Wild Rice (uncooked)
  • 4 Cups Chicken or Vegetable Stock
  • 1 tsp of Olive Oil
  • 1/2 tsp garlic powder
  • 1/2 tsp dried parsley
  • 1/2 tsp onion powder
  • 1/4 tsp cumin
  • 1/4 tsp dried thyme
  • 1/4 tsp dried basil
  • 1/4 tsp dried sage
  • 1/2 tsp Salt and Pepper (each)

In a 2 quart sauce pan, combine all of the ingredients and stir.  Place over medium to high heat and bring to a boil.  Once most of the water has been absorbed, cover and lower heat to low.  Let cook about 15 -20 minutes.  Rice will be cooked once the black rice starts to split and has a softer texture.  Once cooked, remove from heat and fluff with a fork and serve. 

**If you are making this in a rice maker, just place all of the ingredients in the pot, mix and let the rice maker do the work for you!
