Buffalo Chicken Tostada topped with Avocado Crema

Leftovers…. A word that can make some people cringe or make others swoon over the many creative dishes that they can accomplish with leftovers.  I for one, can go either way.  I will either cringe over yet another day of lasagna or baked chicken or make believe I am on an episode of Chopped and try and figure out how I can take lasagna, cheetos and a beef tongue and make it into an edible mouthful of goodness.  (Those sound like horrible combinations, I know… but, I bet there is someone out there who can make this into a dish you’d want again and again!)

What is one of my FAVORITE ways of transforming leftovers, especially chicken or turkey??  Usually its throwing it in a tortilla and creating a taco or a quesadilla or something of the like but, I wanted something that was spicy but, didn’t have such a taco-ish taste.  Then it came to me as I was passing by one of our favorite wing restaurants… Buffalo Sauce!  Duh!  I know, so simple yet when you are looking at something for long enough, you are bound to stick to what you are used to doing.  Then, I thought even further, well didn’t want just that in a quesadilla so what do I put it on?  I just headed to the supermarket and started to roam the aisles as I usually do until I saw the tostadas, on the very top shelf, and I wondered… why didn’t I think of this before??! (Well, one excuse is that I’m short and barely 5’1″ soooo…)  Now, what do I top it with?  I knew I had to tone down the spice by adding something that was almost cooling but, I don’t like straight up sour cream and I’m not a fan of Blue Cheese.  I did remember that I had avocados at home and cilantro in my new garden and again, visions of Chopped came to my head… Avocado Crema! (click on the link for the recipe)  Ok, grab all that I needed and get home for Friday night leftovers and a possible movie. 

This recipe is SO simple and SO tasty that your entire family will be asking for it over and over!  And if you don’t have any leftover chicken or turkey, you can always make it with a ready made rotisserie chicken from the supermarket!  Here’s to not so boring leftovers!

This recipe makes 8 tostadas.

Ingredients

  • 2 Cups of shredded cooked chicken or turkey 
  • 1/3 Cup of a Buffalo Wing Sauce (Like Frank’s Red Hot)
  • 8 Tostadas 
  • 1 Cup Mozzarella Cheese
  • 1.5 Cups of shredded cabbage 
  • 1/2 Cup Avocado Crema 
  • Green Onion (optional)

Directions

  1. Preheat your oven to 350°F, line a large baking sheet with parchment paper and lay out 8 Tostadas and set aside.
  2. In a bowl, place your already shredded chicken or turkey and pour in the wing sauce.  Mix well ensuring that all of the protein is coated.
  3. Place about a tablespoon-full of the coated chicken or turkey onto the tostada making sure that you spread it out evenly.  Top each one with mozzarella cheese and place in the oven for about 10 minutes until cheese is melted and starts to bubble, making sure that the tostadas don’t burn.  (If they look like they are turning too dark too quickly, lower the heat on your oven)
  4. Remove from oven and top with shredded cabbage, Avocado Crema (click on the link for the recipe) and green onion (as an optional garnish)

Tips & Tricks: Tostadas are normally found in the Hispanic Aisle in the supermarket, if you can’t find those, you can make these on tortilla chips as well.
