Black Bean and Corn Salad

This salad can be used as a topping to any of your favorite Tacos, Taco Salads or even as a side to any main dish, this even is a great topper to any southwest burgers or just as a delicious snack! So easy to make and bursting with color and flavor!

Ingredients:

  • 1 15oz can of Black Beans (rinsed)
  • 1 15oz can of Corn (drained)
  • 3 Plum Tomatoes (diced)
  • 1/2 Cup Red Onion (diced)
  • 1 Tbsp Fresh Cilantro (chopped)
  • 2 Cloves of Garlic (minced)
  • 1 Tsp of lime juice or the juice of 1/2 a lime
  • Salt and Pepper to taste
  • 1 tsp Jalapeño (diced) (optional)
  • 1 Avocado (diced) (optional)

Start with combining the Beans, Corn, Tomatoes and Onion in a medium sided bowl, use a spoon to mix. Add in the garlic, cilantro, salt and pepper. Lastly add in the lime juice, once combined, taste. (You may want to add in more salt or pepper if you’d like) Add in the jalapeño (if you want to add in a kick of spiciness) and the Avocado. Mix gently.
